When fresh, this unique dessert gourmand smells of mushrooms with a faint hint of syrupy sweetness that dries down into a delectable maple syrup akin to the nature and flavor of its fungi namesake, the "Candy Cap" mushroom (lactarius rubidus), a northern California redwood forest native.
